Fresh Hop 2020

    Id be curious if any of the large companies are doing this or even interested, since they’re the ones with patents on the popular hops. I’d take year round fresh Cascade, Centennial and Chinook hops but they definitely don’t sell as well.

    When I first encountered this idea I read about two companies, one near Denver and one on the east coast, and both seemed focused on selling wet hops direct to local brewers. I don't see the big hop farms being interested in the technique because it undercuts all of their advantages in the market. I honestly have a hard time seeing this really take off outside of a couple of markets that have a high density of very hop heavy breweries.

    Undoubtedly drinking what will be my last "fresh hop" beer for the season. SN wet hop harvest ale on tap at John's. It's a far cry from some of the outstanding fresh hop beers I've had locally this year, but is still a beer I'm happy to see. The brief period of time I lived in Morgantown WV in 2012, bottles of this beer were as close as I got to drinking fh beer. I think there was only one beer bar in town that carried it, and apparently I was the only one who would order it. The beer does have a nice (albeit rather slight) fh character that is enjoyable.     Yeah, they touch on that a wee bit in the article. I don't know the difference between flash freezing and freeze drying (let alone the whole cryo thing....). I'd suspect they've been playing around with it though.

    With freeze drying you don't have to keep the product frozen afterward. Its very similar to regular drying but the low temps keep volatile organic chemicals from dissipating, so you would in theory have more of the flavor and aroma compounds that are present in fresh hops but missing from dried hops.
