    Pickle-brined the chicken for two days, then worked out some dry spices for the fry. Only condiment is spicy mayo, but I don't think that will be a problem. Jalapenos and red onion were pickled in lemon juice and salt for probably 40 minutes (I don't move fast when I'm frying).
