Am I wasting my time without a real "cellar"?

    I don't think you will have anything "sour or spoil" but you will have to look out for signs of oxidation, etc. These things can be subtle...

    Does this article tell you how the changes can be subtle? IMO...the best way to tell what is going on is to have a control of fresh beer available to compare to the aged sample. This can be hard to accomplish, though...
