For me, IPA's go well with NOTHING!

    I can't even do this, unless the first is a single and the second a double or significantly stronger in aroma and taste. One dipa pretty much ruins my taste for hops for the night.
    That said I like spicy food and ipas, but im not trying to evaluate the beer while I'm eating, I'm just thirsty.

    Count me in with the "Cheddar" folks.

    Nothing beats a nice, hoppy IPA and a quality Cheddar.
    I like to pair a nice Midwestern IPA (hoppy, but not bitter) with a 5-year, Wisconsin Cheddar at room temperature.
    I chew up a bit of cheddar, then flood my mouth with IPA, and I am delighted as an INTENSE floral characteristic bursts forth.

    IPA and Cheddar is my single favorite food/bier pairing, actually.

    Just last night I was having some Prairie Breeze cheese and an IPA!

    For my mouth, ipa's pair well with foods that are spicy and/or greasy. Buffalo wings immediately come to mind. Also pizza and beer (any beer) are a no-brainer.

    That sounds DELICIOUS! Holy crap, I'm hungry.

    Though, I could use a good chocolate stout with some ice cream right about now.

    Got brave & tried Heady Topper & homemade oatmeal cookies last night.. it went much better than expected, so good I'd do it again. Must try the PtY pairing when it's released in Feb, cheers!

    I'm not a fan of beer and food together either. I like having a little or medium sized session before the meal or a little over an hour after my meal.

    IPAs do go well with Mexican, or spicy foods. Beer goes well with a basket of fries also I've found, but that's about it.

    All this love for Pizza and beer....meh. Too filling.

    IPA goes well w/ fried foods and particularly fried seafood: fried clams, fried scallops, fried shrimp, fried fish, along w/ fries and mayo. Hops cut brilliantly through the grease and fattiness.

    lots of good responses, but I generally like Steaks with my IPA's!

    As long as the ipa is fresh, I'll enjoy the shit out of it whatever the food you add to it :grinning:

    You're in the wrong forum. I would generally never try a beer for the first time while eating. But with beers of which I'm quite familiar, food pairings are excellent.
