    I knew you would, brother!

    It's kind of amazing, the things you don't notice until you see how much time has passed. But preparing a mise en place in a professional kitchen is no big deal. "Hey, you: your life is slicing celery for the next two hours. You over there? Dice onions."

    But when you're doing it on your own, as the sole cook? Shit, I probably spent 2 hours organizing, preparing, peeling, cutting, searing, deglazing, saving scraps for stock, before the stew all came together - and that's when I started simmering and thickening it! :grinning:
