    It is unseasonably warm here in AZ this December... but I am not complaining! I am having a WCIPA that was gifted to me by a neighbor. It is quite good and quite piney!

    Happy Tuesday BA’s! Having a celebratory beer as I finished the last of my Christmas shopping today. It was actually a nice afternoon out with my daughter as she is the perfect age to be a huge help while shopping for my wife

    I spotted the bourbon. I made a beer run this morning and almost stopped at the state store to pick up some Maker’s Mark. But, I knew that if I did things would not end well the next few nights.

    One answer to your question is to "own" the supply chain. You have to either be big enough or in this case have the ability to grown your raw materials in order to accomplish that.

    Dave, this post is very timely. My son left his pellet smoker in my yard after Thanksgiving and I was going to try some salmon for a family Christmas party this weekend. It’s always been a go to this time of year but have never smoked it myself. Looks terrific!

    ...I agree...I mean, "Mom's home cooking'...jumpin' Jesus on a pogo stick...most of those recipes were from pioneer grandparents or Great Depression era inventiveness or plain ol' Betty Crocker recipes...and everyone likely added their own twist to things...use what you have, season things smartly, don't be afraid of some experimentation...artistic endeavor and good times with what you've got is the heart of cooking...

    Right along here ba. Shugga, og recipe strong ale, Lag. Wow, this stuff is really good.
    Sweet, hoppy, crazy smooth and the 10% lets you know. Lots of barley wine aspects as well. I only grabbed a single but I may go back for a whole pack,

    ...my take on salmon smoking (barring some sorta high-tech wonder temperature controller thingy is go low with the temperature with salmon...I use charcoal...one technique I like of late is called the 'snake' charcoal method...in essence: ring the outer edge of your grill / smoker with briquets, place your preferred smoking wood on top of the charcoal, fire the snake up at one end, and let the smoking begin...

    ...I like this method because it enables me to hot smoke the salmon at a relatively low temperature (e.g. 160 - 170 ℉) just by playing with the venting on my smoker...then, when I want to do various meats, I just open up the vents and I'm up to the 215+ ℉ for brats, steaks, chicken, etc....

    ...again, a lot of the technique is magic and gut feeling, but there is some science to it...quality temperature probes / thermometers are key to gauging and timing things...
