    I spent a month think how ridiculous and expensive the Box Set was...then I was able to try all 13 beers and damnnnn was it a great experience. Mind you I didn't pay for it and I still think I would rather just have the beers, it was still a great time and there aren't any that disappoint.

    Around 75%, turns out I did get 5.5 gallons, sparged too much but ah well. Ended at 1.058. I screwed up the infusion and got 142 then added some boiling to 146, then waited 25 min. and added a gallon of boiling water to 156 and collected after 20 minutes. Water chem was 50% RO water and 2g gypsum in mash and sparge water. My water is hard as heck so YMMV, but I know that typical saison water is higher in sulfates so that's what you want. It took off in 16 hours and was one of the fasted bubbling batches Ive made yet. I am going to ramp it up tonight to warmer temps so we get spicy in there.

    My approx Final water if you wanted to know:

    Ca: 81 ppm
    MG: 14 ppm
    NA: 19 ppm
    Cl: 35 ppm
    SO4: 111 ppm
    CaCO3: 153 ppm

    3 ml lactic acid in Mash and sparge water. pH was in range as expected. EZ water is the best.
