    Hey guys, I just picked up a 4-pack of this yesterday and I haven't seen it around Tucson for a long time so I decided to put a couple away and see how they go. Has anyone aged these before? If so, what was your opinion of them? Are they worth cellaring for a bit or should I just drink them? It seems like they'd age with the win grapes and the ABV, but I don't really know.

    unless anyone chimes in with experience, i'd say try aging 1~2. DFH's weird high gravity beers don't, in my opinion, lend themselves well to generalities. the best way is to try for yourself.

    i haven't had it aged, but i'm a big fan of it fresh. honestly i think there's a 50/50 chance of it getting better... the flavor says to me "will either get very bland with time, or will taste basically the same with some improved malty/oxidized complexity." like i said though, i wouldn't trust projections for such a unique beer.

    re: the wine grapes, by the way, fruit additions (regardless of variety) generally just get less pronounced with time. edit: wait, the grapes are fermented? (i don't memorize what goes into all the various DFH kitchen sink beers) in that case, i don't think it influences the "age-ability" at all; or not in any predictable way.

    Thanks for the input. Maybe I'll just age one and see what happens. Then I have 3 I can enjoy now (I think its one of their best Ancient Ales)


    Oh and "lol" at the use of "DFH kitchen sink beers". love it.

    From my experience anything with a wine influence becomes less pronounced with age. Heavy Seas's Cabernet Barrel Below Decks is all red wine when fresh, after a year the wine is completely gone.

    I'm not crazy about this brew at all,but I have a August/2011 bottle that I am aging as an experiment.

    Put a couple away for the hell of it....no?

    I really like this beer fresh. I have maybe 2 bottles left from 2010 and they're drinking fine. Different, but fine. They certainly are losing that bright honey pop I like about the beer though.

    I jist opened one from July 2012, not old. Fresh I really liked it. This one had lost almost all carbomation and had a very big honey taste, thats about it. It was really dry and my mouth was dry as well. Not sure whats up with this bu I dumped 1/2 of it. Fresh for me now on.

    Well I only have one put away. I'll give it some time and see what happens. It sounds like yours may have had a bottling issue.

    I have a 2010 and 2011 I'm sitting on right now. Once I open one/both, I'll report back.

    I had one i aged for about a year and a half recently and i picked up some funky flavors. Dont know if it was a bad batch or maybe i just tasted it on a bad day.

    We tried a 2010 and a 2012 side-by-side last year. I think aging the beer mellowed out the pronounced flavors (as you'd expect.) Since I don't really like that beer in particular, but mellowing it out seemed to help everything come together well.

    Im sitting on a 2012. Berr was decent to beginwith. Hope it is as good aged.
