    Oh, man. An appreciation for real, pure, and high-quality maple syrup is something I'm very proud of as an upstater. Sounds weird, but it's part of who I am.

    Well... happy beer drinking evening folks!

    Hope all is well. Crushed a bunch of de Struise at Churchkey in DC... what great times and fortunate circumstances.. also some real neat Czech pilsners from Pivovar Kout Na ŠŠumavě, real interestin! Gotta go back for more of em!

    highlights though... probably my fav stout to date.

    Oh I know this feeling well, my friend! I know Canada and Vermont make great maple syrup, but we poured our hearts out! My dad said that when he was in school, he would wake up and find the maple shed pumping smoke out, and even still when he got home and was ready for bed my grandfather was still out there boiling sap! (This was around 1970 ish) It was never to that degree when I did it but a lot of work goes into more the anyone dare or cares to know. I would honestly estimate around 20,000 to 35,000 trees tapped every year and it would fill a 1000 gallon tank fairly quickly if the weather was right!
