Gonna finally break out my 2007 Williamsburg AleWerks Grand Illumination tomorrow night to go with cheese and dessert. It's a little bit over five years old now, probably on the downhill side for an American Barleywine, but I've been saving it for a special occasion, and I figure that Valentine's dinner with the love of my life is as special as it will ever be.

Why have I saved it so long? It's the closest brewery to where I grew up, the guys there are cool, and from talking to people at the brewer story, when I told them that I still had a 2007 two years ago, they were astonished.

What beers that might not be the most highly regarded to you hold close to your chest?

It took me a long time to finally open my 2008 Thomas Hardy's Ale.

I have been holding onto a 2-3 year old Unibroue Terrible. It's by no means a rare or expensive beer, but Unibroue was one of the breweries to really get me into craft beer and its the first beer I ever bought with the intention of cellaring (yeah I'm still pretty new to the craft beer scene!). To be honest at this point my tastes have changed so much that I don't even know how much I'll like it, but I have another year or two until I "need" to drink it.

Any beer that has one of those corks that are all the way in the bottle and that you need a corkscrew to pull out and can't just use your hand. Took me forever to figure out how to use the corkscrew...Don't judge me lol.

Every Founders Breakfast Stout I consume. It's so bittersweet that every bottle I open is one less bottle in the fridge...

That's exactly how I feel about this beer... I don't want to age it and lose that amazing taste, but its so hard to drink.

Love their beers, not my entry into the craft scene but have not found one I don't like yet. I have a 750ml Maudite and La Terrible in my fridge that I can't seem to open along with a Duvel Tripel Hop from 2010

I would say my last Pozharnik from Pennichuck and any of my verticals. With the verticals I always tell myself next year I will drink it when I get that year's bottle while it it fresh, and then I just put it in the cellar and trade for a second one and have it fresh anyways.

Jeez, where do I start? 2007 Unibroue 17 is always calling my name, as is the 2008 GD Yeti, 2004 SA Chocolate Bock, 06-12 BCBS vert that I just keep stretching into "just one more year", 2010 Ivan and that last naughty little Rare.

For me it's CBS. I know it needs to be consumed pretty soon but I'm waiting on a special occasion to drink that along with the rest of the founders stouts(fbs kbs and FIS)...just can't seem to get time to dedicate a whole night to doing this lol.

Some people listed bottles they didn't want to open because they were attached to them while others listed bottles that were physically hard to open.

Cascade bottles are physically hard to open, the corks are to tight and getting them out is a struggle.
