    My craft beer journey started with trying to find a suitable replacement for Red Oak in college. Red Oak is a locally brewed beer that is brewed by the German Purity Law thus distribution was limited at that time. I tried every red beer that I could find, but nothing really fit. I was able to try many beers and find my personal flavor profile.

    What I found was that my tastes had changed from a sweeter red beer to a darker more rich flavor of porters, stouts, browns, bocks, and oddly enough Belgians. What I have found in my taste travels is that while I am not a huge fan of IPA's, it isn't the style itself that turns me away. It is the particular type of hops that is am averse to Cascade, Saaz, etc. I find that I prefer carbonation over the more flat stouts.

    I am not scared of lambics or flavored beers.
