I had my first bottle of Palo Santo tonight and it was absolutely incredible. I can't imagine how good it will be after I've aged it for awhile. I can't believe a beer this good is a year round offering. Thank god, because after my first glass all I wanted to do was drink the rest. Never had a beer quite like it.

I've gotta clear some space in the cellar. This one's got a year on it. My sinuses are stuffed up and I can still smell the funk from two feet away. Outstanding!

I prefer the Double as far as taste, but availability as a factor the Undercover is one that I have drank a lot of this past year.

TASTE OFF! Let's call it a tie between my first OLD STOCK ALE from North Coast and my old favorite STONE IPA from Escondido CA. Both a privilege to enjoy.
    Here's the OLD STOCK REVIEW:

    4.34/ look: 3.75 | smell: 4 | taste: 4.5 | feel: 4.25 | overall: 4.5

I have not found a strong ale I really like yet, this might be it. This one made me keep upping my rating as it warmed, and I craved (and found some) cheddar cheese with it. A great cheese course/ final beer of the evening.

Appearance: Great color: jewel like dark amber; but otherwise uneventful. Rich head that fades too fast, returns with a swirl, very sticky lacing

Smell: Brandy is first note on a malt backbone, definitely one for a snifter!
Some molasses, cognac, vanilla, raisins, alcohol.

Taste: Brandy like as in the smell, and it's supposed to be consumed in a chalice at 60 degrees F. I agree. A "roller coaster" as one reviewer put it! It's a deep fast dive through complex flavors:
Malt, sweet raisins, caramel, molasses, pie crust, running into a spicy long finish. Warming.

Mouthfeel: Medium to syrupy, not cloying because of the fiery finish, which burns off the sweetness as it ends. A good kissy mouth feel.

Drinkability: Pretty much a MUST TRY, MUST CELLAR. One of a kind. Up there with other ancients like Belgians or Duchess of Burgundy, but really, I think this is more enjoyable. Try this instead of a brandy or whiskey.

... and the Dirtwolf said, "I'll huff and I'll puff and I'll blow your taste buds down."

I thought it may be a hopped up (of course pun intended) version of Hop Wallop but it is more interesting than that.

Ha! A couple years back, because of a brutal snow storm, I had to stay in motel in Eastern South Dakota. I also went to the gas station next door to get some beer. What did I purchase? Why the best beer they had in stock, of course. What was that beer, you ask? Shiner Bock.

Ending my night with a little Founders. After the Rochefort 10, the coffee and chocolate on this really come through, it tastes like a chocolate peanut butter cup with coffee beans. Just fantastic!

Make mine a double in one big glass. (Too lazy to get off the couch when I know I'm going to have another one anyways.)
