What homebrew are you drinking now?

    Have three just in time for Christmas gifts -

    1 - Nut Brown
    2 - Irish Red
    3 - Hefeweizen

    Nothing special, just started two months ago and couldn't be happier!

    Drinking a bourbon oak chunked barleywine. Very good mouth feel and carbonation. Bourbon faded way more than I’d have hoped, thou still pretty good, just not great.

    As promise on post #340, today I tasted the American IPA that I brewed back on Nov 2nd; I did three hop additions in the 60 min boil plus dried hopped it while in the carboy (I used Centenial hops). This puppy taste close to Dogfish Head 60 min IPA. Next in the brew schedule: Weizenbok. HOG

    sadly, I'm almost out of homebrew, and the ones I have aren't quite ready yet (need another week to carb to optimal, I think, as this yeast was a tad slow on test bottles).

    good part is I've got founder's breakfast stout and great divide yeti and breckenridge oatmeal stout in the fridge, and I'm a stouty mood, as it's been pretty cool (and even downright cold a few nights) lately.

    next up brews are a straight Belgian pilsner malt smash, with super-galena hops, and then an ESB which will be posted and blogged, a clone of a commerical batch, recipe from brewer. Hopefully the ESB is last 5 gallon batch before moving to ten gallon system. Hopefully, lol.

    I had another of the cascade hopped barleywine after a day of snow clearing. Carbonation is spot on now, to my relief, and it will likely drink like liquid candy in less than a year. Christmas gift giving has commenced accordingly.

    Belgian Oddball...

    Rye saison base
    Belgian Hybrid yeast (saison / trappist blend)
    dark candi syrup added
    dry hopped with noble hops

    Scored a 40 out of 50 with it in a regional BJCP competition not too long ago.

    Rye pale. GP base, Malted Rye, C40. Eldorado, Centennial and Cascade. With vintage cheddar and club crackers.

    Drinking a Munich/Glacier Smash to get all that Munich that won't be in the stout.

    Maple Rousse brewed with 6lb of Vermont Grade B Maple Syrup in a 9 gallon batch on 12/10/11 and tasting better than ever after 2 years of conditioning!

    Pretty straightforward extract APA (2 cans pilsner lme, 1# wheat dme) with a boat load of American versions of noble hops (crystal, mt. hood, liberty, sterling) used at FO and DH. Definitely a great change of pace from the typical fruity-citrus hops.

    Did a challice of my Winter Warmer with a splash of Knob Creek, drinking a challice of my White ISA from August, much more like a bitter Wit now.

    If you see the smoked maple version of the Knob Creek, a shot of that in hot cocoa is worth trying. It is my wife's new favorite this holiday season.

    On the other hand, I had another of my jalapeño beers from this summer last night. Pours almost ruby red from the crystal malt, mostly, but is clear as a bell and quite drinkable, even if lacking in the pepper flavor that I wanted it to have.

    Named after my new little one.

    A little too bitter for 70 ibu's but it will do.
