    Love the look! Is there an advantage to wax dipping caps? I thought I read something about caps potentially rusting over time,but I haven't cellared anything long enough to put that to the test

    The benefits are pretty much just aesthetic. Wax is O2 permeable so no oxidation benefit, and unless you're cellaring for a really long time in very moist conditions, I doubt rusting caps will be an issue.

    I wonder if vintage beers will ever become valuable like vintage wines.

    Finally got this guy up and running. I was having a lot of issues with condensation on only one shelf, the top one for some reason. This freezer has the coils going through the shelves which is why I added the plywood. Got the Eva Dry 500 rockin' on the top shelf and it's setup with the Johnson Controls A419. Time to fill her up!

    A 2014 La Folie, going to throw it on soon when some friends that moved to AZ come back to visit. 2L boot of La Folie in our future :grinning:

    Speaking of mold, (and forgive me if this is the wrong thread for this question)
    I have a fairly sizable cellar, (roughly 400 bottles) and being that I will be moving soon, I started going through a few things to start organizing. I found a few boxes in the back that appeared to have mold, possibly black mold. Those boxes will not be going - they're getting chucked as soon as I can. My question is about the bottles that are in there.
    I am not too worried about the mold sneaking in through corks and caps, but I would rather not bring those spores along.
    Being a homebrewer I have plenty of Star-san and a couple other sanitizers around, does anyone know if a soak in starsan will take care of those spores?

    We finished our new active cellar last month. It has double-layered drywall with insulation in-between, an insulated ceiling, double-wide insulated door and a CellarPro wine cooling unit.

    There's a little bit over 100 beer bottles in there at the moment, but capacity for so much more. Time to get shopping...

    Digging this. Do you have anything on your cellar build? I think I'd be saving money if I stored mine this way. Any additional photos/info would be awesome.
