    I'm into that Sierra Nevada Flipside already. I'm following it up with one of my favorite porters, Mayflower Porter. I'm letting my steak come to room temperature before cooking it in the skillet. Finishing it off with mustard butter, it will be accompanied by some proper frites. For an appetizer, though it is not fitting with my French steak-frites theme, I made something that my Italian relatives would be proud of. I recently made duck prosciutto. My basement, for whatever reason, has optimal temperature and humidity for drying curing meats. I've cured pork (making coppa) and beef (making bresola), so I figured why not try some fowl? In any event, the duck prosciutto is a major success and I'm serving it in a classic way, sliced thin over some melon that I scored at the farmer's market.

    Preparing for my trip to Kansas City in two weeks, stopped by Local 44, picked up a six of Boulevard Brewing's 80-Acre.
    A nice couple there just happened to be from KC, and offered suggestions on rib joints, etc.

    I love that beer as well. I'd love to do a blind tasting for shits and giggles with that, summerfest, and The Crisp.
