Not much to it. I'm more concerned with the water than the actual grain bill since it is such a simple beer to brew.

It really depends on your goals, but your water profile looks fine to me.

I'd be more concerned about your choice of yeast than the water.

What would you recommend? I'd prefer to use a dry yeast as opposed to making a starter for liquid.

    Fermentis 34/70. Pitch two packs.

W-34/70 is not a great yeast. I'd suggest Wyeast 1007 with a starter. I might also try K-97 as it's supposedly similar to 1007, but I have not tried this yeast yet so I'm not positive how well it will work. Might be worth a shot.

In fairness, it should be noted that many people like/love 34/70. Personally, I have no opinion on it, since I've never used it.

He asked for dry thus I gave him a popular version. He's also making an American lager so I'm not sure he's looking for a "great" yeast with lots of "character".

34/70 also happens to be what he already had in his recipe.

I've read a lot of great things about 34/70 and know a lot of good brewers who use it. Whenever somebody says a yeast is not a good yeast I take it with a grain of salt unless I know that they used proper pitch rate, fermentation temp, etc. I ended up buying Saflager S-189 on a recommendation from a guy I brew with. Thanks!

Edit: also based my decision off of the spec sheets.

I've heard good things about S-189, but I have not had a chance to try it yet. Eventually. Hope you like the result.
