    My latest sour just finished carbonating, and it blew me away.

    Its a blond sour I fermented from a starter made ONLY with the dregs from Cantillon, 3F, de Garde, and Jester King bottles. The wort I brewed was a traditional style turbid lambic wort, which I kept in the primary for about 16 months. In July 2018, I transferred onto a few pounds of super ripe white nectarines and let it ferment fairly cool. In September, I added a split vanilla bean, let that sit for a bit, then bottled early October.

    Its pretty rockin....acidity is smooth, nice funky/stone fruit aroma, and the vanilla just supports the fruit flavor and makes it a bit creamy. It has just the slightest hint of that 'cheerios' off flavor on the finish, but that usually ages out for me. Couldn't be happier with it!

    Coffee Stout Redemption; redeemed by venting the bottles about a dozen times each....definitely not part of a low-carb(onated) diet, but tastes good and the coffee is on point.

    Dubbel with Hornindal kveik. Needs more time on the keg (sub 36 hours so far). This is okay... won’t brew again but I won’t dump.
    [​IMG] Lithuanian beer with saaz and styrian goldings. I like this a lot, definitely needs a couple days to condition in the keg but the flavor is nice. Very saisonish. Peppery and citrus notes. Dry clean finish.

    Belgian Dubbel to celebrate the anniversary of the last of the debris to be hauled off from our disturbed air last year. As soon as power was restored I made these for my Christmas gifts (2017). Of course I kept one tucked away and a year later it has aged well . . . better than I have.

    Gonna check FG of my gluten free stout. Will decide if I want to rack some or all to secondary with some adjucts or bottle as is. I have some french oak cubes I have not used.

    Also ordering my kegging equipment! Have found some good deals scattered around as well as a local shop that will fill my tank.
