    CBS '19. Last bottle of this. Barrel is mellowed, but still has the maple nose and taste. Just an awesome beer that has good distribution. I'll have to get some '20 here soon.

    Also, now browsing what BBQ spots I could easily get too on short notice. There is one new place near me that just opened, but some of the pictures I have seen make it look like a joke. One of the best places near me is closed on Sundays, the other two I could go to are very good but they have huge multi hour line waits, and I"m not doing that. Hmm...

    This 11% monster tastes like a chocolate caramel Sunday. "Decadent" is the only way I can describe it and could smell it from two feet away when poured into the glass.

    I haven't had Middle Ages in, well, ages. I haven't had Dragonslayer, though.

    As for my Buffalo sauce, I make it myself, and I've made a lot of Buffalo sauce (including as a professional cook many moons ago), so I'll have no aspersions cast my way on that front. Needless to say, there are a bunch of different ways to make the sauce, depending on exactly how hot, or how savory, you want it. Buffalo sauce should be a point of departure, and customized for how you really want it.

    This base was butter (naturally), Frank's, Crystal, and a healthy dose of El Yucatan Habanero sauce. Any habanero sauce will do if you're looking to add heat, as long as the base is still Frank's (or similar), but I prefer to keep all my pepper sauces "red" when making Buffalo.

    I suppose other chilies would work well, but I'm not a heat freak. (Asian chilies? Maybe? Never tried.) Habanero is more than enough to add plenty of heat, while maintaining the flavor base.

    Garlic powder is a nice addition, but only if you go with a light touch. Honey (scream blasphemy if you must) is also a nice addition, but again, it has to be very light, to the point that it's not really noticeable in the final product. If it tastes sweet like honey, you haven't made Buffalo sauce; you've made honey hot sauce, which might still be really good, but it's different.

    (That's kind of the key, too: you can make all kinds of delicious hot sauces. I love various wing sauces. Thai chili lime, garlic lime, honey hot BBQ; go with whatever floats your boat. Those sauces aren't "Buffalo," though.)

    I've never added Worcestershire. I just don't see the need. It's savory enough just from butter. It might be really good; I add quite a bit of Worcestershire to my Bloody Mary, after all. I've just never tried it.

    That's it. No pepper or additional salt necessary.

    Sadly, as you mentioned, the chicken is a delivery mechanism*, but I would have preferred real, bone-in wings. These worked out OK - the emphasis was on the sauce (and blue cheese dressing, naturally) - but good crispy wings would have been better. :slight_smile:

    *(Since this chicken was skinless, I had to "add" the skin. Buffalo does not work properly on skinless chicken, it just doesn't. Flour or panko work about equally well, and it's personal preference (I suppose it also depends on if you have a deep fat fryer). I went with melted butter, panko, pepper, garlic salt, and a dash of lemon juice. Chicken dipped in raw egg, then covered in panko. Not as good as no kidding bone-in wings, but it got the job done.)

    Never seen mc3, just mc2 - which is delicious. Is 3 a higher ABV or are there more differences?

    Very windy here today and a large limb has broken off my neighbors tree and is hanging by what looks like a thread about ten feet over the roof of my shed. It's partially supported by another limb, but it won't take much for it to go. If it falls today, I think it's good bye shed. Very difficult to get someone on a Sunday and I doubt they'd go up in this wind anyway. I've got a ladder long enough to reach and cut off a lot of smaller branches, but it looks dodgy given the wind and I'm not sure it would make enough difference anyway.

    Second beer of the day is Collective Arts Grapefruit & Elderflower IPA. 6.3% and made with Azacca & El Dorado hops. A very good beer. I think I might have quite a few today and see how things look tomorrow morning. Will definitely need a pro to cut out the bulk of it if it hasn't fallen by then. Cheers.

    HB's Winter Spezial (bottled 10/01/20).
    If you see this beer, buy it. You won't be disappointed.
