Drinking the fourth of the barrel aged Imperial Stouts from Wellington Brewery in Guelph, Ontario, the folks who also brew my go to Imperial Russian Stout, an 8% beauty.

This fourth beer is called UVB-76 Roman. It’s 11.9%, like the others, and is straight up Bourbon barrel aged, with nothing else added. IMO the Bourbon is perfectly incorporated, slightly present on the nose and taste, but not interfering with the base beer. I don’t drink spirits, so the subtle approach is always preferred by me in these situations. I don’t think I’m exaggerating to say that the four beers I’ve posted about over the last two days are raising the bar for Imperial Stouts in my province. Regarding the 11.9% of all four beers, I’ve been told but have not independently verified that this is the highest alcohol level you can produce in a beer in Ontario without also having a distillery licence. turtle had eggs. There was a male in the tank but I caught them in the act so I removed him two weeks ago and she laid eggs tonight so I removed them and put them in sand under a heat lamp. In 7 weeks there may be 3 more as long as they didn’t freeze in the water (it is heated though) and I handled them carefully enough. She moved all the rock I guess looking for a spot to lay so they just came out in the water.

Having some shine from the Hop vine tonight. This is a pine bomb, super dry finish very light malt body and smooth carbonation.

Truer words were never spoken. I had to learn that lesson the hard way.

Cheers all. Gonna have another glass of cheap wine. Do not fear. Tomorrow I am gonna pick up some Bell’s Two Hearted which was not sold in Virginia the last two years, and on Friday gonna get a bunch of Triple Crossing IPAs/DIPAs.
