    UR Mar Gurhd - Honestly one of my favorite IPAs from Sean. Between D Citra D Galaxy and Susan. Can't decide. But why should we be reduced to choice...cheers man!

    Yes, Chris Lohring is an advocate for conducting decoction (double and sometimes triple) for brewing some of his beers.

    With today's modern malts, which are highly modified, there is no absolute need to conduct decoction mashing. Having stated that the breweries in the Czech Republic do conduct decoction mashing since that is the way they do things there due to tradition but also the Czech brewers do thing that decoction mashing does bring 'things' to the party. During the decoction mashing a portion of grains and water from the mash is removed and boiled. During the boil maillard reactions occur and melanoidins are formed. The concept here is that as a result a 'richer' maltiness occurs plus there is some darkening as well. If you want to conduct an exBEERiment you could conduct a side-by-side taste test of Pilsner Urquell and your favorite German Pilsner. You will note that the German Pilsner will be straw yellow in color while the PU will be more golden in color. Also you will note a difference in the malt aspects of the two beers.

    In another week or so I will be brewing my annual batch of Bohemian Pilsner. I will not be conducting a decoction mash but when I brew this batch I use a bit of Vienna malt in addition to Pilsner malt. Vienna malt has melanoidins from the higher temperature kilning of this malt (higher in comparison to Pilsner Malt). The addition of Vienna Malt will also provide a darker golden color as well to the resulting beer.

    My favorite Bohemian Pilsner is a beer from Slovakia: Golden Pheasant. Below is a photo of my homebrewed Bohemian Pilsner and Golden Pheasant from a past NBS thread:

    This beer tastes like Drekker and Other Half got drunk and had a baby that ended up being a sour ale. This one is an actual sour despite all the adjuncts.
