    Well back in the kitchen cooking like a mofo in a very hot and very high volume waterfront restaurant. So dont have the desire to spend alot of time cooking at home. That being said I know all about Bison been using it for years and coincidentally had Bison burgers tonight. Last night I made bacon, fresh clam and jalapeño pizzas. So I still cook but have a crapload less time to spend on anything at home. Happens when a restaurant is doing 15-20 k per day. Slammed all day and night nonstop.

    Yeah, just like lean(er) grass-fed beef, I cook it way less than I would beef that is corn-fed.
    I use the finger test to make sure it's medium - rare. Otherwise, no bueno

    When given the option to have a beer without the responsibility of drinking alcohol I will ALWAYS drink excessively it seems. Luckily the calories are tuned down in most of them.
