    I always wanted to try an elderberry lambic and this certainly didn't disappoint. I think the natural tartness and bitterness of the elderberry makes it a perfect fit for lambic, making me wonder why it's not more commonly utilised for the style.

    Tilquin - Oude Sureau Tilquin A L'ancienne (Fruit Lambic): Overall, this makes for a lovely, quite woody and funky lambic with a distinct, tart and bitter elderberry presence that is a joy to drink, although it could be a bit better carbonated.

    A much quieter pace than what he usually did, but I like it. Not hip hop, but you know well by now I enjoy literally any musical genre.

    Just finished up some killer Chinese for dinner. Kung Pao chicken and some Szechuan fried green beans. I never had those green beans before but they were amazing, I never knew a green bean could taste like that. Sprinkled both dishes with some crushed Thai chili to up the ante a bit. Now I'm having a Celebration IPA ...

    ...an interesting email response I got from Cycle Brewing regarding its '8 Year' bourbon barrel aged imperial stout:

    It’s in the 11-12% range most likely, barrel aged beers require a very expensive and very specialized piece of equipment to measure true ABV since the aging time, volume in the barrel, and the amount of whiskey in each barrel can all have major impacts on that and 2 of those are total guesswork, so ABV can’t be measured via the much more accessible and common change in gravity.

    ...I've always found most breweries to be very responsive to honest questions. Cycle continues this trend...:slight_smile:
