    Corned beef dinner done.
    To anyone that hasn't taken the dive I highly recommend you make your own corned beef.
    This batch came out stellar. A couple of twists in the 7 day brine - in addition to the freshly toasted spices I added some star anise plus lowered the salt content. This was some damn good CB. Speaking of that this quad stout was provided to me by the stellar BA @beergoot
    I'm surprised at how drinkable this 15.7% stout is. Really great stuff here to round out this meal. Thank you my friend![​IMG] [​IMG]

    Dinner is in the books, Guinness glazed ribs with loaded potato skins came out excellent. And yes, I did type Alai Jai by accident earlier, clearly didn't drink enough before grilling, making up for that now. Ghost in the Machine and a little Bushmills......

    I love Hamms. I remember just chugging the heck out of them on Fremont Street, in Vegas, at 50 cents a pop, after a very bad beat in a poker tournament. I also remember the time my friend downed a 30 pack in the boat on a fishing opener. That didn't go well for him.

    I love that beer. I blame that damn bear.

    I really enjoyed that beer. Usually not big on the nitro can thing, but that one was very nice.

    ...I'm still grateful for the bottle you gifted me with...this and the HoTD 'Don' beers make for excellent night caps...perhaps I'll experience a Samuel Adams 'Utopia' and see how that compares to Dystopia and Don...

    Utopias was worth the splurge once but this satisfies my itch at a fraction of the cost.
