    The Ale Apothecary -- Sahati
American wild ale with spruce aged in wine barrels & bottle fermented with honey

    look: 4.5 | smell: 4.5 | taste: 4.5 | feel: 4.5 | overall: 4.5

Pours out an impressive clear, dark copper color, the body gets turbid with sediment with additional pours; fairly dense and lively carbonation presence; initial thick head, very fizzy but last for a few minutes before regressing to a thin wisp of dense suds circumferencing the inside of the glass with lots of carbonation bursting to the surface of the beer. Nice blue spruce element to the smell offset with a prominent note of caramel. Blue spruce tips immediately greet the taste buds, soon followed with a lightly sour taste and an infusion of honey; tart notes nicely offsetting the heavy sweetness. Heavy body; acidic counterbalanced with a nice residual sugar sweetness; dense and slippery on the palate.

It has been a long time since I last had a sahti-inspired beer. I also have had some relatively recent experiences with other styles of beer infused with spruce tips (and, yes, they are edible in the Spring when they are young and still tender). Anyway, I like how this beer has aged somewhat yet still exudes the spruce notes in the smell and taste as well as the honey. I can't say I notice any distinctive wine barrel flavors unless that is what I pick up as more of a wild ale tartness and sourness. Regardless, it comes across very balanced and definitely unique in flavor and mouthfeel. This is a good beer to try, especially if one likes farmhouse / wild ale classes of beer.

Back from a great week in Texas, I stopped at my local grocery store whilst on a mission to buy some salad for dinner tonight at Mrs O’s request to accompany the pizza at MY request (lose the battle, win the war for all my married BA friends), and tripped over this iconic WCDIPA really fresh (BBD 10/24).

I’m so happy, I could cry. The WCDIPA style is my favorite, and this OG trendsetter is one of the best, IMHO. Absolutely love it.
