The wind is insane outside. Glad to finally arrive and thanks @VABA for holding my seat near the warm fireplace. Cheers all.

 

The usual suspects, right?

 

That's why I don't wrap them in foil. The low 250 degree heat and the dry rub/jerk sauce help to keep the meat tender and you get that nice bark. When you wrap them, they essentially end up steaming - but there's no right or wrong way to do them, it all comes down to personal preference in the end. I generally roast them for 5 hours unless it's a smaller rack without a lot of meat. Cheers!!

School tomorrow has already been cancelled for the kids because of an incoming storm. I'll have to go to work in the morning, but we'll probably leave early. I fell asleep a while ago to this in my headphones.
