A post dinner side by side from my cellar - Trappistes Rochefort 10 (1/10/12) vs. Trappistes Rochefort 10 (12/8/24):



The ‘12 was a gusher! No evidence of oxidation in either bottle. The ‘24 had some head/minimal cap retention, otherwise both looked the same. The ‘12 had more fruity esters in the nose, the ‘24 had more vibrant sugary raisins aromas. Taste-wise the ‘12 is dull leathery caramel malt; the ‘24 was fresh prune, plum and caramel. There was more carbonation present in the ‘24. The ‘12 had some residual sludge in the bottom of the bottle which was absent in the ‘24.

Overall, the 2 bottles are very similar. The ‘12 seems a little flat flavor wise with no off flavors while the ‘24 is robust (the retained carbonation was a plus and enhanced the drink ability). I won’t say the ‘12 was past it’s prime, but the ‘24 was clearly more appealing.

I’ve now drank down my TR10 science projects after 10 years of cellaring and “experimenting”…time to find a new cellar equipment. Cheers and have a fantastic Friday night y’all!

Yes, I use Ancestry, as well as familysearch.org. I'm also active on Findagrave.com. But often the best source of information is the cemeteries themselves and also local historical societies. I love solving mysteries and that's basically what genealogy is - finding new facts and then piecing them together. Sometimes the information you unearth is exciting and fun but it can also be disturbing.

My wife would love 80 at home but gets 77. Her test cells for missiles at work are at 68, lots of electronics. All the guards know her as "the lady in fleece" walking at 0800 in a North Face jacket......
