If you're really going to do it, get super ripe bananas, mash them up, and heat them up to ~65C for 30...
I've used 34/70 at about 60F (air temp), and had no issues whatsoever. I can't think an extra couple of degrees would make a huge difference.

2.5oz of those hops split evenly in 5 Gal of ~1.060 wort, and a hopback/whirlpool with 10%...
I know saisons can be dry, but a SG of 1.000? That seems suspiciously low, especially if it is an all-malt recipe and tastes tart as well...
