Wow. All I can say. I had this same batch (#2, Nov. 2006) a few years ago and thought it was a total soy-bomb. With six years of age on it, it's turned into a truly remarkable brew. Carbonation is still excellent, with a finger of head upon pouring. Dark fruits and molasses notes up front, with chocolate, coffee and caramel on the finish. This beer has aged very well. Alcohol is still present, with a slight warming feeling as it goes down. Shows no sign of slowing down. Has anyone had this lately? I would like to hear your thoughts.

I just had an 08 a couple days ago and it was very tasty. Definitely some soy going on with the 08 but not too bad or overwhelming. Unfortunately that was my last one, maybe should have hung onto it longer.

On a side note it is interesting that the soy flavor faded over time with your Mephistopheles. I did not know that flavor could fade with increased time. I have had a couple of soy bombs in the past and wonder if some additional age could have done them some good.

I haven't had one lately. I had the 06 in 2010 I think, and I thought it was awesome. My palate was a little less refined to pick up subtleties then though. I have an 11 in my closet/cellar waiting for my 30th bday (in 2015), but I an getting the feeling I may want to wait longer.

I had similar thoughts to the '09 I opened up. Very good beer, not really any soy sauce in the one I opened, but it had been in my keezer for four years as opposed to room temp on a shelf somewhere.

soy sauce flavor (sherry, meaty and cardboard as well) are all products of oxidation (varying degrees of it), so additional age would most likely only make it worse. Most likely the OPs experience was either bottle variation or different storage conditions for the bottles he consumed. I had this experience with some of my '09 Dark Lords, some were amazing, others were soy sauce with a touch of meat and sweetness.

I opened a batch 2 over the summer and ended up dumping. It was an oxidized hot mess.

That makes more sense. I would have thought additional time would only make it worse as well. I think also autolysis can contribute to meaty flavors which would make sense for high ABV beers. Thanks for the input. This also makes sense of my experience with Hunahpu. The bottle I had was huge soy bomb, very harsh and borderline undrinkable. I thought this was odd because I love Marshal Z. I will chalk that up to bottle variation as most other peoples experience with it is much more pleasant.

I suspected oxidation myself with the first one, although both bottles were stored in the same place. I waited this long to drink the second one partially due to fear of the same experience, so bottle variation is very possible.

    Love the avatar, BTW!

Ha! Thanks. They're awesome dogs, plus the boy dog on the right is truly a beer advocate, as he's the only animal/person I've met who loves Stone Belgo Anise stout (Probably because of the peperoni smell).

I try to get my corgi to respect beer, but she wants nothing to do with it!

I've noticed that most dogs will beg for a hoppy beer even if they have never tasted any. I think the smell is just so intense they can't help it.

Just out of curiosity, is this beer still being made? I haven't seen it on the shelf in a long time.

I think it is. I bought one last December that was bottled in November 2011. I imagine its not something they brew often. Although of the three Demons of Ale brews this one seems to sit on the shelf the least. The Beast and Samael don't seem to be hard to find.

I have a couple '11 on hand, but haven't seen this years. We might just get spotty distro of it in SoCal.
