Aging sours and lambics

    The corked-and-caged La Folie bottles have aged really well. The new Lips of Faith one won't really age that well -- at least in terms of maturing -- as they're pasteurized (filtered?), so there's no living yeast/bacteria in the bottle to help it develop.
