    -> Poll #2 <- determined that the Final Gravity target will be 1.013, with an OG target of 1.056.

    Now we'll start selecting the grains/fermentables. Pour yourself a beer...this will take a while.

    You can select more than one choice. The #1 overall choice will be automatically in. Beyond that, any other choices that get votes from at least 30% of respondents will advance to future poll(s) to determine exact combinations in/out. If less than 3 (beyond the top pick) get votes from at least 30% of respondents, three will advance to the combinations poll. There will also be polls (where necessary) to select specific varieties of the grains/fermentables that advance to the combinations poll. Want something that's not listed? Write it in.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, as well as any possible yeast strain selection that might be kicking around in your head.

    This poll will be open for 72 hours.

    I voted for "other adjuncts" on the off chance that people might want to throw some oats in there. I also voted for honey malt because I think a little bit might be nice. Otherwise just the standard stuff, pale ale malt, roasted malt, and crystal malt.

    Shit, I missed c malts. I'm thinking pale, chocolate some middle of the road c and oats. Always oats.

    Brown ale. Brown malt? Yeah, I think so. Seriously, I think a bit of toast work well in this style.

    As Victory and Crisp Amber are remarkably similar, perhaps these two categories shoud be combined?

    I'd like to throw some toast at it too (Ă  la Tim Curry)
    For those who voted Amber/Brown I'm curious to know what you're using as your benchmarks for what they bring. After a bit of interwebbing I'm finding color and flavor vary considerably between the two, and Brown color varies a lot against itself depending on where I found it (didn't save the links, except for Simpsons).
    Amber - 15-25-35, dry, bready, biscuit-like, slightly toasty, no residual sweetness
    Brown - 38-45-55-60-70, dark toasty (Simpsons Brown is 162-226, coffee bean flavor)

    Victory/Biscuit are close to each other (same?) with color ~28°, and flavors as toasty, biscuity, baking bread, nutty, clean.
    I voted Victory/Biscuit in hopes that's what it brings. If that's not an accurate description, I'm all eyes for the the next best thing.

    I was tempted to go with biscuit, I was tempted to go with brown, but I think either of these might be more in line with a British style than an American one. So, for now, I'm thinking pale ale malt, chocolate, crystal. Pretty generic grain bill, but with all those C hops we're going to put in, that'll be fine. Brown IPA all the way! :wink:

    Marris otter, roast, touch of crystal should do the trick. Oats might be nice but unsure.

    They are certainly similar in Lovibond color, though I would say the hue and flavor are different. And then there's Fawcett's Amber, which is substantially darker. Voters may want to vote Victory/Biscuit if they have Crisp Amber in mind, and Amber/Brown if they have Fawcett Amber in mind. Amber/Brown is one of the necessarily cats and dogs categories sort of forced by having only 10 slots. If Victory/Biscuit advances, I'll also include Crisp Amber in the ensuing specific variety selection poll (as well as any further Amber/Brown poll).

    My favorite brown ales always seem malty, nutty and somewhat toasty. So, pale ale malt, munich or vienna, some victory, and a little brown (is what I voted for). I honestly had a hard time choosing between that and chocolate. I went brown because it's pretty easy to go from toast to roast with chocolate.

    I went with the kitchen sink approach to hopefully allow options in the next couple of polls as we narrow things down. I don't expect all of these to end up in the recipe, but options are good. No Carapils :slight_smile:

    Pale Ale malt, chocolate, caramel, brown, victory, honey malt and other (oats sound good to me).

    edit: how about Golden Naked Oats to scratch the caramel and oat itch at the same time?

    Just a quick note - if you think you might want oats, and you haven't voted for "other adjuncts," now's the time to push it above 30% to keep it in the running. Although as wspscott mentioned, perhaps GNOs can sneak in in the "other cara/crystal malts" category.

    Yes, GNOs would be in the "Other Cara/Crystal Malt(s)." They are not an adjunct.

    I'd like a couple people to consider adding "other adjuncts" to their vote with the idea that oats might be worth considering. Remember, just because you vote for it here doesn't mean it will end up in the final recipe.

    Nice petitioning. I helped to bolster Other Adjuncts.

    Since my horse Victory-Biscuit is among the laggards in this race, will any of you folks throw some feed his way and help save that nutty brown mare from being put out to pasture?
    He needs just 4 more votes to be a contendah, and it’ll only cost you a few clicks.

    Well could we get a rules clarification from @VikeMan? I'm happy to vote for some of these ingredients to continue on, as long as we will get another opportunity to eliminate them in future rounds. (I'm not talking about the top vote-getter, I'm talking about marginal categories like the one riptorn is stumping for.) But if this is basically it, then I don't want to muddle things too much.

    I understand and agree.
    Being relatively new to all-grain I'm using web searches to see what any given malt might contribute, and then looking for characteristics that are common among the various descriptions for the given malt. Two very common descriptors for Victory/Biscuit were nutty and toasty. Those are attractive to me and not inappropriate for an AmBrown.

    If other grains already in the running can bring nutty and toasty (esp. nutty), that'd be great.

    Only the number one vote getter from this poll is automatically in. Anything/everything else could be eliminated downstream. There will be polls to decide what specific ingredient(s) from each of the still-in-the-running categories advance to a combo poll to determine what is in/out.

    Amber or brown malt can give you some nutty toasty qualities. They are tasty grains.
    Also, golden naked oats are a bit nutty.
