    Time to determine an IBU target, Tinseth calculation. I recommend thinking in terms of balance with the target OG and/or FG, as well as the grains. If you select "52 or less" or "70 or more," please write in your specific value in a message.

    Target ABV: 6.5%
    Target OG: 1.068
    Target FG: 1.018
    Apparent Attenuation: 73%
    Yeast: Wyeast 1084 (Irish Ale)
    Recommended Mash Temp: 154F
    Grain Bill:

    North American Two Row Brewer's Malt: 68%
    Munich: 15%
    Roasted Barley: 5%
    Chocolate Malt: 5%
    Oatmeal, Toasted: 7%
    Flavor/Aroma Hops:
    Willamette
    Chinook

    68, because of no reason other than 68 point OG, 68% base malt

    '68 was such a great year too. Everybody was happy, strife and social unrest were at an all-time low, political harmony was the norm, wars had finally been abolished once and for all, and the beatles finally got high enough to where they didn't totally suck... WAIT A SECOND!! 1968 ? That was a terrible year!! :astonished:

    I'll vote for '57, as in October 4, 1957. Now that was America's shining moment. :rolling_eyes:

    Here's a write-in for 44 IBUs please. BU:GU = .65 roughly.
    For the other voters of <52, what was your IBUs?

    I went with 54, BU:GU = .80 seems about right for an American stout, a little hoppy/bitter but not over the top. Don't forget there are no caramel malts, i.e. don't hop this like a black IPA or RIS

    48 IBUs, .70 BU:GU sounds great. Seriously wondering what it up with the 68 IBU votes, a 1.0 BU:GU, what is this a Black IPA? If we are using the 68, 68, 68 thing we really need to go back and redo the yeast again and get that 1968 in here.

    Well, I'm not very set on my vote anyway, could easily be swayed by a good argument or a good beer on this one.

    SN Stout, the beer people were discussing in relation to this beer, is only 50 IBU's.

    I'm hedging my number, I'd go lower if I knew most if not all of the hops will be late additions.

    I love Night Stalker and I'm impressed at how much hop flavor GI is able to get in there (they use Mt Hood and Simcoe) for such a large stout that is listed at 60 IBU. That's probably a BU:GU ratio of ~55%. I know it's not an American stout, but it has a great hop profile, that's the part I'd like to capture.
