    -> Poll #23 <- determined that the bittering hop(s), if any, will be Styrian Goldings.

    This poll will determine the timing of the hop additions (but not quantities). Some may feel they can't vote on timing without knowing the total amount of hops to be used. Oh well, we have to start somewhere. Multiple choices are of course allowed for this one. Any timing choice with at least 50% of voters choosing it will be in. Any timing choice with less than 50% of voters choosing it will be out. Hopefully the options cover enough bases (and then some). If you don't want a particular time, don't vote for it...there will be no run-offs.

    This poll will be open for 48 hours.

    If you have issues with or suggestions for methodologies used in this project, please send them via beermail. Let's keep the threads themselves on topic to the question at hand and not about how you would have asked the question differently. Lobbying for votes and intelligent discussion of each choice's relative merits is encouraged.

    The Averagely Perfect Dubbel Recipe so far...

    Target ABV: 7.0%
    OG: 1.065
    FG: 1.012
    Yeast: Wyeast 3787 or WLP530
    Mash (recommended): 60 Minutes @ 152F
    Assumed Mash Efficiency: 70%

    Grains/Fermentables:
    ---Belgian Pilsner Malt (86%)
    ---D-90 Syrup (8%)
    ---Caramunich (4% Total)
    ---Special B (2%)

    Hops: Styrian Goldings (timing and qtys TBD)

    All FO/WP, 5, 20, 30 minute voters, if you want any type of late addition, please change to 10 minute so it gets over 50%

    I'm interested to hear some strong opinions either way on late hop additions. My initial instinct is 60 and a smidge of hops at 20. I'm not sure I can bring myself to go all the way to 10.

    I like a touch of floral and spicy hops in the nose and palate, not much, just a smidge. Adds a tad bit more complexity without messing with the starring malt and esters.

    There is more to life than late hops. Anyway, you might be shocked to learn how much character you can get from good noble hops added at 60 alone if you'd try it. I've done this many times. The beer still DOES taste spicy, believe it or not, with hops added only at 60. And, you can save a few bucks. Unless you grow your own of course.
