Barrel-Aging Beers: What do you want to see next?

    To whoever said something about the style being an overdone trend-
    Beer has probably been stored in barrels (used for other stuff) experimentally forever. Wine at first, then spirits when they came around.

    Hitachino has done their XH in Sake and I would love to see Sake barrel aging!

    Pickle Barrel aged beers, I know Cantillon has Mamouche, but I would like to see more Pickle barrel sours.

    A cognac barrel originally then having brandy aged in that, then finally a imperial stout to soak in some fruity esters to it!

    A brewery here in LA made a pickle beer recently. It wasn't a sour though.

    I was just joking in my previous post, but honestly if a brewery did a pickle barrel beer, I would imagine it would be very salty.

    Was it any good?

    I actually didn't try it. They also made a guacamole beer if I remember correctly.

    Jester King ages Viking Metal in gin barrels. Base beer is Gotslandsdricka. I haven't had it yet.

    It's not like switching from cognac to brandy would make much of a difference, cognac is brandy.

    A Gose/Berliner Wiess hybrid, using agave syrup for a secondary fermentation, conditioned in chili pepper fermenting barrels.

    Blended with blood orange juice and a splash of tomato juice, and then served with black pudding and bacon.

    I want an ice cider that was aged in a barrel that has gone over Niagara Falls! Ok--maybe just a Bourbon Barrel Aged Ice Cider would be killer. :slight_smile:

    More Belgian breweries doing barrel aging but doing it properly, getting advice from American’s etc. some examples are just depressing.

    Also interested in trying more beer aged on Tequila, Wine & especially Pure Oak barrels which seems a rare thing.

    Would like to try something aged on Sake barrels as well. For science!

    Experimentation with other styles / styles less frequently barrel aged.

    Spicy saisons in Tequila barrels. Chasing nice resposados with some Saison Diego was highly enjoyable next to the pool during the summer. Seemed rather complimentary to me.

    less barrel ageing..........ok hear me out..........I am only being 1\2 serious. I see a lot of attempts at barrel ageing.........just not work out. Too much character from the wood is transferred and it seriously upsets the balance of flavors........When done properly it works out great, and makes a unique product. when done wrong...well.....It really just does not work.

    However, I will say that what I HAVE enjoyed is the odd variety of barrel ageing. new beer styles experimented on with barrels, new kinds of spices and adjuncts added with the barrels (ex coco nibs and espresso), and new kinds of barrels. I personally want to see more wine barrel aged beer. I would also like to see cheaper 4 packs of (hopefully restrained) barrel aged brews instead of more expensive bombers......I would seriously like that. More canned barrel aged beers as well!

    Tequila Barrel Aged Pale Ale or Dark Rum Aged Stout/Porter or let's get a little more creative and make it a lime bourbon aged IPA ... While we're experimenting, how about Fireball Barrel Aged Belgian Strong Ale?

    Being from Chicago I would like to see FFF Apocalypse Cow aged in Malört barrels. It would be called Mrs. O’Leary cow and only be sold in Chicago.
    Not because they only distribute to Chicago but because only people in Chicago would drink the stuff.

    Yeah I've been saying this for a while that it deserves to be BA. I assume it's because they are a (either primarily or predominantly) can-based brewery, but this is me standing on the sidelines and drooling over BA Ten Fidy

    Ok since no one thought that was amusing, how about on a more serious note, irish whiskey? Loved the hoppin frog Boris version they did last year. I also understand it's not cheap to get irish barrels in the U.S. Either. Still it seems to hold excellent potential. Would love to see a big malty beer aged in black bush barrels.
