    Interesting, easy to read/follow article/podcast breaking down research into enzymes contained in hops, and how dry hopped beers don't shut down these enzymes, and how this affects beer.

    "Basically the hops are taking something that's considered by brewers to be unfermentable, and breaking them down to the point where they can actually referment, or become fermentable, or potentially contribute to sweetness, as beer ages."

    This can also cause Diacetyl to increase in dry hopped beers

    Great MBAA podcast on this with Shellhammer, Perkins, and guys from Bell’s. Guys from Bell’s did a study and published their research this summer. I don’t feel like paying the $50 to read it unfortunately. Definitely varies by variety, lots, etc.

    helps to have some keywords to narrow down the search. you mention "guys from Bells" but I have no clue who these guys are. where did they publish the paper? are they associated with an academic institution? I'm sure I can find it if I spend some time, but since you're familiar with this paper, you can just link it or at least provide some keywords.
