Best beer for beer cheese

    Had this discussion today at work. With the warmer weather I haven’t made beer cheese for a while, curious what beer folks prefer in theirs.

    Never made it but everytime I buy schlenkerla marzen the girl at the bottle shop tells me it's her favorite for making cheese with.

    Torpedo. I LOVE Sierra Nevada’s beer cheese and they use torpedo.

    Interesting to use something hoppy. I usually see restaurants use reds ambers and stouts for whatever cooking uses. An ipa would give it some zip.

    Shit no shame in that. I have made beer cheese out of smoked Gouda and Shiner bock. I served it for my daughters birthday with homemade pretzel sticks. It was a winner. If you want to amplify the beer affect, use a non hoppy beer with a good malt bill, i.e. bock, stout or porter. Slowly boil away some of the moisture to produce a thicker, syrupy consistency and start building your beer cheese with that. If you need to thin it, you can use the beer straight from the bottle.

    I prefer something malty and hoppy... a good American Red/Amber like Troegs Nugget Nectar (seasonal) or Troegs Hop Back Amber (Year-round) are my favorite choices. I also add things like garlic, onion or hot sauce to the cheese, so the hoppyness helps cut through that.

    Sharp Cheddar works beautifully with Gueuze and Rauchbiers

    I also like to eat Havarti with a nice German Pils

    I haven't tried anything hoppy before, but malty beers have seemed to work well.

    I had a recipe that called for a Pale Ale and used Dale's. It was only a half cup of beer for the recipe. "Hooter's" fans should try their beer cheese and pretzel pieces. I like it with an IPA. I also like the idea of Ballast Point's Habanero Sculpin.
