I use untreated spring water which is harder than hell, and make great tasting beer. I only have a water profile for greenhouse production and have never needed to make water adjustments.

Where I occasionally work/brew they do need to make adjustments

As a water/wastewater operator/lab tek, water chemistry changes some with chemical additions while others can change with the seasons especially if a municipalities water source is a river or lake. Drilled wells can also change, but in my experience to a lesser degree.

If you want to play water/beer chemist and your on municipal water, in Vt we have to give you our report and are happy to. My town is fortunate and has a very clean aquafer. Usually we run 0.2 mg/l free chlorine. No other additions required. I use this water at the winter brewing headquarters with no trouble.
