Blow off tube setup w/ thermowell?

I'm at the start of building an STC-1000 controller. Using a thermowell and heat blanket, then adding a keezer when money allows. The thermowell seems straight forward for small beers, something like this:

However, what do you guys do when you need the large blow off tube for big beers?
