    Brewed a classic German Hefe over the weekend.
    50/50 pils/wheat and Weihenstaphan yeast.
    I love a fresh Hefe.

    At what temperature will you ferment and for how long? I have this yeast and like it.

    Getting some sort of an IPA recipe together. I’ve got a bunch of bohemian floor malted pils, as well as caramel Munich malt. Centennial, Citra and Vic secret in the freezer, along with 4 oz Ekuanot hop hash on hand. Now the challenge is figuring out what to use at what time! My instincts are saying use the centennial for bittering, citra/Vic during the boil, and hop hash at whirlpool/dry hop.

    Brewing up a small batch of buckwheat saison with dandelions today. 30 ibu’s of hallertauer. Dandelion heads at flameout. Fermenting with WY Farmhouse and eventually pitching a mixed culture. I’m contemplating adding a small amount of Black Locust honey halfway through fermentation. Never used it before but the flavor descriptors sound like it would compliment the beer well.

    Higher end of temperature range will give banana, lower will be more clove. So whatever your preference. Also, under pitch (no starter for 5 gallons). How long? Just let it go till it’s finished.

    Brewing a Munich Dunkel tomorrow. Weyermann Munich I, Munich II, Aromatic, and some Carafa for color. Fermented with OYL114 Bayern.

    I'm on a low/no carb diet until FWIBF, so I've been iterating on this hop water recipe trying to get it dialed in. I love Lagunitas most recent hop water, but it's ungodly expensive for something I know I can produce in mass if I just get the recipe right.

    Working on getting my third pilot batch done today. Flavor and taste are ~8/10 for me right now, which is about at parity with Lagunitas. Trying to fix the mouthfeel, it feels a bit thick in the mouth at the end, want a little more crisp bite and dialing up the carbonation hasn't fixed it.

    A lot of simcoe sitting around so screwing around for a new tripel...

    80% pilsner
    20% clear sugar
    60mins: simcoe (16 IBUs)
    10mins: saaz (3 IBUs)
    5mins: styrian & simcoe (6 IBUs)

    Brewed for the first time in a little over a year on Friday. Also used my new electric biab system for the first time so a bit of a learning curve but the brew day was much better than on my old system. Also my first 10 gallon batch. Happy to be back at it!

    Went with a Hazy Pale Ale:
    52% Rahr 2 Row
    31% Golden Promise
    17% Rahr White Wheat
    Idaho 7 for 5 mins in the boil
    Idaho 7, Citra, Nelson in the whirlpool
    Citra, Nelson dry hop
    Omega DIPA Ale yeast

    Prepping up batch 4 of my hop water clone. Got batch 3 90% there, just want a little less bitter in the aftertaste

    It's been well over a year since I brewed. Shooting for a pale ale on June 3, and maybe a RIS on June 24. That's pretty ambitious for me.

    Double brew day yesterday. “House” IPA w/ Columbus, Chinook, Citra and Simcoe and a big batch of Saison w/ Strisselspalt and aged Cascade hops. Planning on splitting the saison up for some fruit projects this summer.

    Hopefully you’ll continue to stop in from time to time and drop some pearls of wisdom about all things culinary, whether it be homebrewing, smoking meats, pickling, etc……
