    Anybody brewing or doing any brew related stuffs this weekend? I am rebrewing a Saison I did 2 months ago that turned out awesome. No changes. This will be the first time I brew a recipe for a second time. Going to enter it into a national comp in a couple months as well.

    5.5 gallon batch
    ABV 4.5%
    SRM 4
    IBUs 20

    90 Minute Mash @ 147*F
    3.5# GW Pale Malt
    3.5# Weyermann Pils
    1.5# German Dark Wheat

    90 minute boil
    40 mins .4oz Nugget 15.0%AA
    25 mins .6oz Styrian Bobek 3.6%AA
    FO .4oz Styrian Bobek 3.6%AA
    FO .5oz German Saphir 3.6%AA
    FO .5oz Hallertauer Mittelfruh 4.8%AA

    1tsp Gypsum (split 3/8 mash, 5/8 boil)
    1 tsp Calcium Chloride (split 3/8 mash, 5/8 boil)

    1.5L starter of WY PC3726 Farmhouse Ale
    75*F 2 weeks, ambient 7 days, bottle @ 2.8 vols CO2 @ 72*F 2 weeks

    Also gonna combine quite a bit of a Blonde Ale that I didn't quite care for and sour it up. Doing 6.5 gals on Brett with 1.25# Clover Honey, 3 gals on Lacto, Pedio, Brett blend. Will fuse them together in a few months along with a gallon of Lacto fermented honey, then split off some to fruits after summer is over.

    I am going to use my beer gun and bottle some up for my brother in law. I also have a dilema. I have all my kegs filled and have 10 gal. fermenting in basement.

    Sounds like a good saison recipe, I have been in the process of formulating one that will be a table saison at about 4%, just looking to get a ton of flavor out of it while making it very drinkable.

    Nothing brew related this weekend unfortunately but next weekend I should be kegging my low abv porter so long as a keg opens up for it and brewing a very hoppy pale ale which I will be using that yeast cake for a future barleywine. So many plans for brewing not enough space or time!

    Yeah, after reading Farmhouse Ales, I really came to the understanding that much of the flavor for a Saison is yeast derived, hops next, malts after that. According to that book, Dupont is straight Pils malt. Using the yeast at higher ferment temps and hopping seem to be key for the flavor of Saisons.

    Bottled 2.5 gallons of Quad this morning, racked a gallon onto oak and bourbon to sit for a spell. Probably gonna brew a Falconers Flight IPA tomorrow.

    I am in the process of reading that book as we speak, very good so far but really not too far in yet. I will design the recipe after I finish the book. I just need some good summer beers that are different from my hoppy APAs.

    Potentially dry hopping a massive 11.5% Imperial Black IPA I brewed last weekend, as soon as the yeast drops. 6 days to go from 1.100 to 1.010!

    Also beer gunning an extra wheatwine I made for the Stone Homebrew Comp (Submitted one made to finals, this one is still sitting with Amarillo & Citra keg hops) cleaning all my brewing equipment plus six new kegs I inherited from a buddy before my forced brewing hiatus.

    It sounds to me that he's reporting his results, not expectations.
    How much of a yeast starter did you use on that? I presume a five-gal batch?

    It surprisingly got to 1.010. Mashing in low (148 for 90 min), a 2L starter (Plus some dry yeast of an equivalent strain), and oxygenation before pitching and at high krausen and 7% corn sugar got it down.

    I may weigh out some grain and hops for an upcoming 18 gallon orval clone and a 6 gallon stout..........I wish our delirium clone would finally finish, I want to bottle it.....

    Tell me about it, I didn't think it would get down there myself... I'm going to refrain from tasting it until its dry hopped, carbed up and cold though! I recently brewed a really big, dry wheatwine (1.095->1.013) and almost threw it out because I made the mistake of tasting it before it was done. I hope this beer turns out well, but only time will tell.
