Agreed and anything big from Dieu du Ciel is great for the cellar. Unibroue's Maudite is best with some age on it, have had many an old bottle of Unibroue that rocked.

Another vote for Driftwood, I got all sorts aging away, that reminds me I should start drinking them.

I find that Charlevoix dubbel, tripel and the Hibernus are really good with a couple of years on them.

As I mention I picked up a bourbon barreled aged peche mortel. My leaning towards drinking it but does anybody think I should lay this beer down for a bit. I wish I could have grabbed two.

Always grab 2 , one to try right away (see if you like it) & one for the cellar/friend/special occassion ... ,

I will enjoy my first BA Peche Mortel on Thursday & the other gets put in the cellar , I doubt it will stay in there for long

It drinks incredibly well fresh, not boozy at all. Aged loses it's coffee presence a bit, up to you!

Ha ha! I dunno, but I'm guessing it's like the automakers - gotta release it ahead of time, or something.

Just had my first bottle of La Resolution last night. I had picked up a couple more to cellar, but everyone - including the non-beer drinkers - liked the clove and gingerbread flavours so much, I'm pretty sure they won't last past Christmas. I'm thinking of getting even more, but wonder if these spicy notes will fade over time. Any thoughts on how this one might age?
