Cellaring Weihenstephaner Vitus?

    Vitus is a wonderful Weizenbock. My question is can you cellar Vitus for at least a year or two (or more), or is it one of those beers you should drink fresh before it deteriorates? I know that Unser Aventinus Tap 6, another great Weizenbock, can age well, and for several years, but it is also slightly stronger than Vitus. Aventinus contains 8.2% ABV, whereas Vitus contains 7.7% ABV. I've read in a lot of places that it is generally best to avoid cellaring beers under 8% in strength, but Vitus is only .3% below a full 8%. Any opinions or experiences?



    Also, any experiences with aging Chimay Premiere (Red Cap)? It's 7%, and again I'm considering the "don't cellar under 8%" rule, as well as Chimay's own recommendations of drinking it within a year. However, I have read of individuals aging Chimay Premiere for 2 years and describing it as still delicious, and some people claim that Chimay Premiere can be aged for up to 5 years. I am hoping someone with experience or good knowledge can give be better insight and advice in regards to this.

    I doubt Vitus would benefit too much from aging. It's a pretty balanced beer when fresh.

    But it might be worth a shot. It's pretty cheap so it wouldn't be too much of an investment to experiment with aging it.

    Probably not, but with such a low cost like ^^ said. Why not. To each there own right?
