So I've been thinking about starting a beer cellar for a while, and I just got my hands on some Mikkeller Beer Hop Breakfast and Eagle Rare Texas Ranger. Would either of these cellar well? If not any recommendations for what to start a cellar with?

I just moved from the US and live fairly close to Chimay and Orval abbeys and definitely plan on picking up some Chimay reserve and Orval each year to stick in the cellar.

    Thanks in advance.

In general, hoppy beers do not cellar very well so I would avoid the Mikkeller Beer Hop Breakfast for the cellar (though it is a quite enjoyable brew and suggest drinking it right away). Not personally familiar with Eagle Rare Texas Ranger so no advice from me on that beer.

In general, I think Russian Imperial Stouts, American Double/Imperial Stouts, American Barleywine, English Barleywine, and Quadruples age the best - in general, the beers that age best tend to have higher ABVs to start with and the aging mellows out the alcohol and big rich complex flavor profiles.
