Before I really got into geeking out on craft brews, I thought Founder's Dirty Bastard was pretty hard to drink. I had it again yesterday and it was not the same as I remember. It was deep, complex, rich, with a bitter bite.

    How has your palate changed?

Disliked IPAs in general. Then along came Ruination... Sort of introduced me to the style rather than a particular beer.

At first I couldnt get into IPAs for whatever reason. I decided to stay away from and just enjoy the more malty offerings that I was enjoying. Then one day I just woke up and thought "I want to ruin my palate with hop bitterness", I bought a Dreadnaught and the rest is history.

Pretty open question but about 10 hours ago my opinion of Chimney Blue changed quite dramatically.

Six or seven years ago my wife picked me up a six pack of Hop Slam. I took it out in my boat on a hot summer day and started drinking. I was not a big fan that day as they were too strong for boat beer drinking out of a bottle. I have realized that they are nice one at a time served in a glass.

Back in the late 80's / early 90's I actually thought Budweiser tasted good.

I'll still drink a Bud today at a party or a bar (without craft beer) but at least now I know that it doesn't taste good.

Didn't care that much for the first three All Day IPA's I had, but by the end of the six pack, I was looking for more. Now on third six pack and it keeps growing on me.

I bought left hand smoked baltic porter and I loved the first one, liked the second one and couldn't finish my third.

Similar story for me. I used to be unable to see the appeal of hops. Then one day I said "Fuck it, if I'm gonna be a craft beer enthusiast, I better develop a love of the bitter!" And wouldn't ya know, 2 bombers of Ruination opened my palate and my mind to the world of the IPA/DIPA/PA. Best decision I ever made for no reason

Didn't think my first bottle of Commodore Perry was anything special, but each bottle since then has been a true pleasure. In the other direction, I liked Breckinridge's Vanilla Porter quite a bit for a while there, but lately I'm not feeling it.

At the risk of posting another "me too" reply, I'll have to say, ...., well, ... me too. My revelation was that there are hops and there are hops. A really nice, complex, aromatic, or "interesting" hoppy beer is really fun to try. I'm still a malty guy but am open to trying a well executed hoppy beer.

I always overlooked Heffs. That all changed when I had Sierra Nevada Kellerweis.

I originally thought Lagunitas Sucks was nothing special when I first had it. I bought a 6 pack a few weeks ago and after killing it, I have really come to enjoy this beer A LOT!

In my early 20's I wanted to venture away from stuff like Boston Lager and try other beer because I thought I found Boston Lager to be boring. Now at 35, I couldn't think much higher of Boston Lager.

Also, like others, I didn't like IPAs at first. But now I can't get enough.

My opinion of, and palate for, sours is currently morphing...though very slowly.

I believe that does happen. Got into non-Bud/Millers/Coors around 97/98 (English friend introduced me to
many English beers) and then went craft bonkers around 2006, never looked back. Really enjoy revisiting
many beers, some I now like and some still do not enjoy!

I was just about to post something regarding this! I had Old Rasputin the other day, which I had when I first started on craft beer, and thought was way too intense, but now is amazing! It really makes me wonder now, how many beers have my tastes changed for? Going to have to start redrinking I guess.
