Council Brewing Company in San Diego

    Stopped by with my wife and a couple of friends yesterday afternoon upon the recommendation of several people whose beer opinions I value greatly. Man were we impressed. This wife and husband team are making liquid magic and they are both very friendly and approachable. Liz is the brewer and she took time to talk with us about her beers and about the company and the theme of their brewery which essentially is community.

    Every beer I tasted was above average or excellent and the "quorum" IPA is phenomenal In my opinion. One of my all time favorites, and that's saying something as I've had practically all of the most highly rated and most sought after IPA's in the world.

    Swing by when you have a chance. You can thank me later.

    Here's another recommendation for Council. My wife and I try to make it there at least once a week. I enjoy all their beer, but I typically go with Gavel Drop IPA, Chizzam IPA, Pirate's Breakfast, Farmer's Gold Saison, and now, Quorom IPA (Simcoe and Mosaic). I believe Quorom is the name of the series, and they'll use different hops each time. The brewery is about a mile from both Societe and O'Brien's.

    For such a brand new brewery, Liz and Curtis are brewing some fantastic beer over at Council Brewing Company. The IPA line up (Gavel Drop, Chizzam, and Quorum) is spot-on and their hoppy beers stand out in San Diego, a city known for world-class IPA.

    They are clearly homebrewers at heart, and the creativity shows in the line-up of beers that they are producing. It should be fun to watch them grow and learn and dial-in their system. This brewery is a fantastic addition to the Kearny Mesa beer scene in SD, located right in between both Societe and O'Brien's Pub.

    Go check these guys out.

    I wish Quorum would stay as is, great aroma and flavor. Love the taster glassware.

    $48 a bottle and sold out in only a few minutes...that is quite an accomplishment for a one year old brewery.

    Edit - $48 for two bottles. Makes more sense thanks for the correction.

    Very old bump, and you probably already know this, but the original Quorum ended up becoming Bully Pulpit. It pretty much is my go to beer there now.

    Bully Pulpit is great.

    Wish I could have picked these up. MT drained my 401K, plus I had a lunch meeting at noon, otherwise I probably would have ponied up for these, too.

    Sonofabitch! I saw the post and thought they were doing a fucking red wine and a white wine. I just kept on scrolling. Anybody taste them yet?

    A few people did at their customer appreciation party, and voted thumbs up. They'll be on in the tasting room on the 5th (when released).

    I love these guys so much. They're all lovely people and their beer is all amazing. I loved Vienne. I wish I didn't have to work so damn much this weekend--I'm very sad that I'll have to miss their barrel aged tap takeover :slight_frown:

    Now that I tried Nicene, I am very disappointed in myself for not getting bottles. As for Deadlock, it was ok fresh off the tap but if you let it warm then it was a raspberry bomb with flavors close to Ensorcelled.

    they bottle some of there beers. I think most of the beatitudes have been bottled

    They don't sell bottles to go out of the tasting room unless there are extras from one of their online sales or a special Beatitude release. Sorry, it isn't like JesterKing's tasting room/lawn.

    Beatitude Bottle Release Today! 6/22/15 @ 2PM

    We are releasing the next set of Beatitude Tart Saison Bottles today in the tasting room starting at 2pm. It will be the second batch of the original three flavors that we released, Mango, Pineapple, and Blueberry.

    If you missed out on the first release, this is your chance! Each 750ml bottle is $14, Limit 6 bottles (2 of each style). Take your bottles home in the Council Tote Bag for an additional $4. We will see you all soon.
