"Evoked Set for Cellaring"

    It seems that most of us start out trying to cellar every beer we can get our hands on, and soon find out that there are few beers that actually get better with time. After a few years, I went from throwing one of everything into my cellar to searching out for a few beers every year that I have found evolve into something that is actually better than the beginning product (most of the Trappist brews, expedition, bigfoot, and mephistopholes to name a few). What has your experience cellaring beers led you to seek out yearly?

    A few beers that I still buy for verticals are Founders Breakfast Stout, Stone IRS & Barleywine, Dark Lord, Behemoth, BCBS, Bigfoot.... Always have some trappist beers in the cellar, along with Aventinus Eisbock, Three Philosophers, Trader Joes Vintage Ale (for Thanksgiving and X-Mas dinners), Bells Stout & Old Ale, NorthCoast Old Stock Ale....
