    I only have one bottle. Does anybody know how far ahead they list the best before date?

    Is Fantome best fresh, at 6 months or is it better with extended cellaring?

    I'm looking to hear feedback on this bottling.

    All fantomes are wildly different from batch to batch and even bottle to bottle from the same batches. So any opinion someone might give you about your batch will likely differ from your own experience. I personally like to drink Fantome at all ages - from fresh out the gate to several years old. His beers have great aging potential for a saison. His house strain of brett is sometimes not even recognizable until the beer is several years old.

    When Dany remembers to utilize the label date coding, I think he issues it as drink by 3 years out. Meaning your bottle is probably already 2 years old. However, he is not consistent with its usage. I know the last batch of Ete he released he put a 3 year best by code on.
