    Drinking DDH Tesseract now. Ooooo00000h lord is it good. Hard to say if I prefer this over Afterimage.

    This latest after image had a lot of pine for me honestly. It certainly isn't my standard of Grimm to compare it to. Tesserect wasn't overly fruity either but just smooth AF.

    I thought in mid air and light year were the better fruit bombs drinking a lot lighter. Maybe it's just me.

    I love the to-the-second canning dates on the cans. Although tbh my 10:37 can of DDH Tesseract really fell off compared to 10:38.

    ha! the time stamp is actually great because it allows us to check on the quality of the packaging run throughout. for example if there are a few cans that test for elevated oxygen levels and it's from 10:37am, then we could check on the cases packaged at 10:39 and 10:35. the idea is to be able to monitor the entire canning run and make sure quality doesn't fall off.

    Dear Top Hops, please top putting your cold cans in paper bags. Just picked up two cans, and was smart enough this time to ask them to double bag it after losing some cans in the past. Even double bagged, here I sit at my desk, covered in the remnants of a DDH DIPA that decided to break free and meet the pavement. :slight_frown:

    One would think I'd learn my lesson after the first time it happened. Alas, I still have one (very banged up can) to enjoy.

    It makes some of my treks (I'm known to take some long walks) to get beer a little more cumbersome holding bags like that, but I (we) spend enough money on beer to have them breaking on the floor.

    I'm not really understanding their hop haze not yeast gloop hashtag particularly from my understanding that yeast in fact does play a huge part in the haze aspect of the brews often more so then the hops. Without particular yeast " haze" can't really be achieved. Maybe it's shade towards London 3 and English style yeast. I know the Grimm mentioned alchemist as their source of hoppy inspiration so I'm assuming their yeast is at least similar to Conan

    We love those yeasts. We started using that hashtag after encountering more and more random glasses of gack. We don't want to choke down a slimy mud colored yeast slurry. Some breweries are shortening the production timeline so much that they don't even bother trying to crash out their biomass. A sign of really good haze in our view is when it pours opaque at refrigerator temp and has noticeably more clarity at room temp. The hop compounds are binding to grain-based proteins to create polyphenol complexes (chill haze) which are somewhat temperature dependent.

    Because we've already removed most of the yeast in our beer you don't have to decant a can carefully. you can actually roll the can to resuspend all the chill haze (including dry hop flavor compounds) without worrying that you are messing up your gut microflora :slight_smile: These compounds will eventually fall out of suspension after some time in the fridge and that's why we suggest rolling the can.

    I've argued against ray daniels in favor of hazy IPA and will always be on Team Haze. But if we want drinkers to stick with NEIPA style long term we can't be giving them glasses of goo and telling them it's brewed to style, because that's sort of disgusting.

    None of the established NEIPA producers are very guilty of this; but it's a huge problem with recent trend hoppers who are trying to approximate the visual impact without really understanding there are two mostly-non-overlapping kinds of haze.

    TL;DR there is bio-haze and then there is hop polyphenol haze. We want to limit the former (ugly) and maximize the latter (beautiful).

    DDH Tesseract was awesome. A much "cleaner" DDH beer. This is going to be a crowd pleaser.
