I'm thinking about brewing an American Pale Wheat, and I want it to have a bright, citrussy kick, but not necessarily very bitter. Should I be focussing on dry hopping to get this effect? And what hops would you suggest? Centennial and Amarilllo come to mind, but I have no experience with those hops in a wheat. Thanks!
I made a great American Wheat, one of the simplest beers I ever made and I used 1oz Willamette at 60 and 1oz Cascade at 15. Cascades have a great grape-fruity flavor to them, that might be just what you're after.
I am currently drinking a wheat my wife brewed that is all Citra - bittered to 18ibus and finished with only half an ounce (5 gallon batch). It's fantastic. So simple too - here's the whole recipe 5# Pilsner Malt 5# Pale Wheat Malt .25oz Citra (60 min) .50oz Citra (5 min) Safale WB-06
Thanks guys! Both of those sound really good. Leedorham - Does your wheat have a strong melon flavor from the Citra? That's the impression I've gotten of it in other beers. And how is it for straight bittering?
