I'll spare y'all the gory details, but thanks to a heap of un-forseen complications I have an order of milled grain arriving in the mail today from Austin Homebrew Supply that is going to become a Dark Mild.

Problem is I don't really have time to brew this weekend.

The grains were crushed and shipped last wednesday (5/23).

Will the quality of the malts suffer if I don't get around to brewing them until 16 days after they were milled?

I can brew overnight tonight if I need to, but I would rather get a normal amount of sleep.

    Please help!

I wouldn't sweat a couple of weeks, as long as you keep them dry and as 'airtight' as you can.

I've heard a couple weeks at room temp is fine. Keep them airtight and dry.

    Oh, I'm glad.

Really didn't want to have to shuffle around a bunch of carboys.

AHS packages in airtight, sealed bags, so they'll probably be fine for a few months if needed.
