If you don't have a cellar, why not?

    Because when this place -- which is built on the side of a hill and has an arched sandstone cellar underneath for lagering beer -- came up for sale for around $30K a year or so ago, it sold before I could put an offer on it. Dang.

    Because any space I might have dedicated to a cellar has been consumed by my own personal brewery.

    FOR ME- I'll take making my own beer over holding onto someone else's for years with the hope that it will taste better.

    I prefer to drink beers that taste good when I want to drink them, not at some undetermined time in the future. While I do admit that some cellared beers I've had have been excellent, I've yet to have a beer that sucked until it was cellared so, I'm easy - tastes good enough to buy now, it has to be good enough to drink now.

    I like craft beer but Im not that hardcore into it and celleraing to me is hardcore right along with homebrewing. As of right now Im only interesting in buying and drinking not storing or making.

    some beer is better fresh. some is not. example, Bells hopslam is much better fresh. I had one last week, and though still good, it was better when i first opened it. much maltier now for an IIPA.
    the other beer i have is Raspberry Truffle Abduction. This i bought 5 bottles of. I drank one fresh. Very, very astringent and sour raspberry taste. I opened one up this last weekend after a few months. Already less harsh and more chocolate taste. i will keep the others a few months longer to see other flavors develop. Therefore; you cannot just say beer is better fresh or that very few bottle age well. Different bottles develop differently, and what you may not like, 1000 other may.

    My solution? if you can, buy multiple bottles and judge for yourself.

    Many say "because the beer won't get better" as a reason why they don't have a cellar.

    Very few people with cellars have them for that reason. Much of what people have in cellars are beers that aren't on shelves year round (or even, like in my case, they aren't around ME year round).

    Its not about improving the beer as much as it is about being able to simply 'have' the beer on any given night.

    Tonight, perfect example: Pacers/Heat, game 7 Eastern Conference Finals. I can't just roll into my local bottle shop (its 100 miles away) and grab a Central Waters Bourbon Barrel Stout.

    But you bet your ass I'll be pulling one out of my cellar to drink tonight. . . but I don't have them there because I think they will get better. I have them in a cellar because:

    a) they're damn good
    b) I can't buy them here

    I have something of one, but my problem is, I DO drink those types of beers every night (stouts, barleywines, old ales, etc.). I have a feeling that mine might now last as long as I'd like. Maybe I can age the sours because I don't drink those every night!

    I live in a townhouse near sea level. I'm not even certain I recognize the terms "Cellar" "basement" or "saving beer for later consumption"

    Currently I'm living with my folks until August. Thankfully they're cool with me taking up a bunch of space for this "hobby" but I can imagine that not being the case for most people in my situation.

    Thank you. I fully understand the people saying "I don't have the (space/money/basement/desire) to cellar." But the people who think the only reason many of us have a nice little stockpile going is because we think the beer is going to improve significantly with time either (a) have a wet dream of a bottle shop around the corner that maintains a year-round, unlimited inventory of every beer from across the country and beyond, or (b) don't understand the concept of wanting to drink a Parabola in February.

    +1. I enjoyed cellaring for several years. Then I started to really enjoy beers fresh. Now I have a bunch of beers I need to drink just to get rid of them.

    I will say there are some beer that get better with age. Expedition stout comes to mind. Yummy.

    No space for me, plus I don't have the money. I also rent, so building a "proper" cellar would probably not be approved by the landlord even if I did have the space and money, heh. I also like beer too much so I doubt anything would last longer than a week in a cellar... usually things don't last more than a few days, if that, in my fridge. I don't buy that much at a time.

    i have a wine fridge that i use to store beer. i don't set out with the intention to age them, necessarily, i just like having a selection to choose from at any given point in time. of course a nature byproduct of this is that some slip though the cracks and wind up aging.
